Homemade Ketchup

Ketchup is an indispensable ingredient in the kitchen, so why not try to make it yourself? As with so many other items on the shelves in the supermarkets, we cannot control what is in them and are often filled with more sugar and salt than necessary.
It is quite easy to make your own ketchup, it may not last as long as the factory-produced variant, but then you can always freeze it in smaller portions.
I made a batch for my birthday, when we were going to grill and then we need ketchup. Yum.

HOMEMADE KETCHUP

1 TBSP. OIL
2 RED ONION
2 GARLIC CLOVES
2 APPLES
2 CELERY STALK
3 CM GINGER
400 G CHOPPED OR CRUSHED TOMATOES
1,5 TBSP. TOMATO PASTE
1/4 TSP. GROUND CLOVES
1/8 TSP. GROUND ALLSPICE
2 TBSP. WORCESTERSHIRE SAUCE
3 TBSP. MOLASSES SUGAR
2 TBSP. APPLE CIDER VINEGAR
2 DL. WATER
SALT AND PEPPER

Peel and chop onions and garlic roughly.

Clean the celery and cut it into thin slices.

Remove the core of the apples and cut them into cubes.

Peel the ginger and finely chop it.

Sweat onions and garlic in the oil in a 3 liter pan.

Add apples, celery and ginger and continue to cook for a few minutes.

Add the rest of the ingredients, stir well and simmer for 1 hour.

Turn off the heat, blend the mixture and pass it through a sieve to make a smooth ketchup.

Season with salt, pepper, sugar and vinegar.
