PEPPERNUTS
ABOUT 60-80 COOKIES

250 g BUTTER
250 G SUGAR
2 EGGS
2 TSP. BAKING SODA
1 TSP. GROUND GINGER
1½ TSP. GROUND CINNAMON
½ TSP. WHITE PEPPER
550 G FLOUR

Blitz butter and sugar together in a blender, add eggs and churn it into a creamy mixture.

Sift baking soda, ginger, cinnamon, pepper and flour and blitz till the dough has just come together.

Knead the dough on the kitchen table until it is cohesive.

Roll the dough to a sausage and pack it into cling film, let it rest in the fridge for a minimum of one hour.

Preheat the oven to 200 degrees celsius.

Roll the dough into small round peppernuts cookies, the size of a hazelnut, and place them on a baking sheet lined with baking paper.

Bake the nuts in the oven for about 10 minutes.
