Royal icing is perfect for decorating both small and large cakes and is easy to mix together. It can be colored in all shades to suit exactly the cake it’s going to decorate.
30 G EGG WHITES
165 G ICING SUGAR
1 TSP. LEMON JUICE
1 PINCH OF BAKING SODA
FOOD GEL COLOR OR LUSTER DUST
Whisk egg whites and lemon juice to soft peaks.
Sift the icing sugar and baking soda into the whites and whisk to a creamy mixture.
Put the icing on a pipe bag with a decorating tip.
You can choose to color the icing with either gel or dust, not liquid color, as the icing will be too thin to keep its shape.
