Lemon Buttermilk Mousse

This is a dessert for someone who is trying to keep summer alive a little longer. But you have to acknowledge when the weather behaves as it does for the time being, you need all the summer you can get.

LEMON BUTTERMILK MOUSSE
4 SERVINGS

2 SHEETS GELATINE
25 G LEMON JUICE
35 G ICING SUGAR
SEEDS OF 1/4 VANILLA POD
100 ML HEAVY CREAM 38%
120 ML BUTTERMILK

Soak the gelatine in cold water for a minimum of 10 min.

Heat the lemon juice to the boiling point.

Squeeze the water out of the gelatine and melt it in the lemon juice. Pour the mixture into a low bowl and place it in the fridge until the juice is just a bit cooler than your litlle finger.

Cut the vanilla pod, lenghtwise, and scrape the seeds out with a knife.

Whisk the cream, vanilla seeds and icing sugar to soft peaks.

Pour the buttermilk into the cream and gently fold it in

Finally, add the lemon gelatine juice in a thin stream while gently stirring with a rubber spatula.

Add the mousse to a piping bag and fill the chosen silicone moulds, cover with cling film and put in the freezer.

Alternatively, you can fill serving glasses with the mousse and place them in the refrigerator for a few hours until the mousse has set..

Serve with whipped cream and strawberries for extra summeriness.
