I baked these cookies yesterday to celebrate my newly renovated kitchen. Crispy and crunchy are the key words. With dark chocolate and peanuts and of a giant size.
COOKIES WITH PUFFED RIS
25 LARGE COOKIES
200 G SUGAR
220 G SOFTENED BUTTER
2 M/L EGGS
2 TSP VANILLA SUGAR
1 TSP. BAKING POWDER
½ TSP SALT
350 G FLOUR
100 G CHOPPED DARK CHOCOLATE
100 G SALTED PEANUTS
100 G PUFFED RICE
Preheat the oven to 170 degrees celsius.
Line a baking sheet with baking paper
Whisk butter and sugar light and creamy.
Add the eggs, one at a time, and stir them thoroughly into the eggs.
Mix vanilla sugar, baking powder, salt and flour in a bowl.
Stir the flour mixture into the egg mixture a little qt a time until it’s incorporated.
With a spoon fold chopped chocolate and peanuts into the dough.
Pour the puffed rice into a bowl and roll the cookie dough, 1 tsbp., into them until the dough is completely covered.
Place the cookies on the baking sheet and press them slightly flat.
Bake the cookies in the middle of the oven for approx. 15-20 min or until you can lightly tap the top and it springs back. The dough should not be wet or porous.
Let the cakes cool down on a rack and then enjoy them.
