This jam is delicious and easy to make, with a good taste of caramelized apples and cinnamon. Last time I made it, it did not take long before the entire jar was empty. When you have some leftover apples left, this jam is a good bet.
CINNAMON APPLE JAM
350 G APPLES
160 G GELLING SUGAR
½ VANILLA POD
1½ CM CINNAMON STICK
1 TSP. GROUND CINNAMON
100 ML WATER
2 TSP. SALT
2 TSP. LEMON JUICE
Peel and core the apples, then roughly chop them. Put the apples in a large pot together with sugar, vanilla, cinnamon, water, salt and lemon juice.
Mix well together, so the apples are covered with enough cinnamon and sugar.
Bring the heat to a medium and let it boil lightly for about 5 min, until the mixture bubbles and the sugar starts to caramelize.
Then turn the heat down to a medium-low and let it simmer for 15 minutes, where the sugar will turn into a thick syrup and the apples will become soft and tender.
Remove the vanilla pod and cinnamon stick, discard them. Keep stirring to the jam has the desired consistency.
Pour the marmalade into clean jars and store them in the refrigerator.
