Small pancakes that are perfect for a delicious brunch. Cocoa and coconut give them a slightly different taste than the ordinary pancakes. And then they can be frozen in smaller packages and thawed when you want little delicious yummy.
CHOCOLATE PANCAKES WITH COCONUT
MANY PANCAKES
300 G FLOUR
2 TSP. BAKING POWDER
1 TSP. BAKING SODA
½ TSP. SALT
5 TBSP. SUGAR
2 TBSP. COCOA POWDER
2 M/ L EGGS
7½ DL BUTTERMILK
60 G BUTTER
DESICCATED COCONUT
Mix flour, baking powder, baking soda, salt, sugar and cocoa together.
Whisk egg and buttermilk together in a bowl
Stir the liquid into the dry ingredients a little at a time until they are just mixed together.
Melt the butter and add to the batter.
Melt a bit of fat or oil in a pan.
Pour a spoonful of batter on the pan, approx. 1/4 dl (25ml) size.
Bake them at medium heat and when bubbles start to appear on the surface, sprinkle the pancakes with a little coconut before flipping them and cooking them on the other side, approx. 1-2 minutes.
Serve with syrup, fruit and butter.
