A delicious espresso brownie with caramel ganache and a marzipan monogram, which I baked as a tribute to the Royal Couple and HM Queen Margrete on the occasion of the succession of thrones. I painted the monogram before the King’s official monogram was published, and used the joint monogram of the Royal Couple with an X added. The wreath around the marzipan circle symbolizes a daisy for HM Queen Margrethe.
SUCCESSION CAKE
12-14 SERVINGS
ESPRESSO BROWNIE:
90 G DARK CHOCOLATE
120 G BUTTER
2 TSP ESPRESSO POWDER
135 G SUGAR
2 EGGS
1 TSP. VANILLA SUGAR
2 TSP BLACK COCOA POWDER
1 TSP COCOA POWDER (OR 3 TSP IF YOU DON’T HAVE BLACK COCOA)
1/4 tsp. SALT
85 G FLOUR
Preheat the oven to 175 degrees celsius.
Line and butter a 20 cm spring mould with baking paper to prevent the brownie from sticking.
Roughly chop the chocolate and melt it along with the butter and espresso powder. Stir until it’s a sleek, shiny mixture, this is best done with a whisk.
Beat in sugar and then the eggs, one at a time.
Add the vanilla, cocoa powders and salt, and finally fold in flour with a rubber spatula.
Pour the batter into the mould and smooth out the surface.
Bake the brownie in the middle of the oven for 20-25 min. The brownie shouldn’t be too jiggly in the middle.
Allow the brownie to cool.
SALTED CARAMEL GANACHE
150 G HEAVY CREAM
150 G CALLEBAUT GOLD CHOCOLATE
45 G BUTTER
PINCH OF SALT
Carefully melt the chocolate.
Heat the cream to boiling point and pour it over the chocolate. Stir it into a shiny ganache.
Melt the butter and fold it into the ganache. Add salt to taste.
Pour the ganache into a piping bag with a french star tip and refrigerate until the ganache has set.
MARZIPAN-MONOGRAM:
100 G MARZIPAN, MIN. 62% ALMONDS
EDIBLE SILVER PAINT/FOOD GEL
Roll out the marzipan to 3-4mm thickness and cut a circle of approx. 15 cm in diameter out.
Paint the monogram and let it dry.
ASSEMBLY:
Place the brownie on a plate and pipe the ganache around the edge.
Spread the rest of the ganache on the center of the cake and place the marzipan circle on top.
