Tomato Tart with Feta and Mustard


A delicious pie as an side dish for lunch or dinner, it can also be used as a small starter. Tomatoes, mustard and feta in interaction with crispy puff pastry. You can use all kinds of mustard, according to your taste, I used a version with tarragon from Bornholm.

TOMATO TART WITH FETA AND MUSTARD
6-8 SERVINGS .

250 G CHERRY TOMATOES
250 G PUFF PASTRY
3 TSP. MUSTARD
2 SLICES OF FETA CHEESE, CRUMBLED
CHOPPED PARSLEY
A LITTLE SUGAR
SALT AND PEPPER
EGGS FOR BRUSHING

Preheat the oven to 190 degrees celsius.

Roll out the cold puff pastry and cover an rectangular tart tin with a loose bottom with the dough. Pierce the dough with a fork.

Spread mustard out onto the bottom in a thin layer.

Wash and cut the tomatoes into slices, place them on top of the mustard.

Sprinkle a little sugar, salt and pepper over the tomatoes, along with parsley and crumbled feta cheese.

Brush the visible puff pastry with egg wash.

Bake the tart in the middle of the oven for 30-35 min.
