LEMON BUTTERMILK SOUP
4-6 SERVINGS
50 G PASTEURISED EGG YOLKS
65 G ICING SUGAR
SEEDS OF 1/2 VANILLA POD
1 L BUTTERMILK
250ML. HEAVY CREAM 38%
JUICE OF 1 LEMON
Mix egg yolks with icing sugar and vanilla seeds to a creamy mixture.
Add buttermilk a little at a time, while stirring with the whisk, so that everything is mixed well together.
Add cream and lemon juice in the same way.
Chill the soup until you serve serve it on a hot and sunny day with strawberries and kammerjunker, and if you want a scoop of vanilla ice cream.
