Raspberry Schnapps

This schnapps is good to have on the Christmas or Easter tables.
It has a nice raspberry flavour and a bit of sweetness from the sugar. And it is so easy to make. The most difficult part is the time spent on waiting for the vodka to draw the flavours out of the berries and sugar, the longer the better.
The finished schnapps will have the most beautiful, crystal clear and ruby red colour.

RASPBERRY SCHNAPPS

300 G RASPBERRIES
20 SUGAR CUBES
750 ML. VODKA

Place the rinsed raspberries in a big jar with a lid. If you are using frozen raspberries, heat them through for at least 2 minutes.

Add the sugar cubes and pour the vodka on top, seal the lid and give it a shake.

Place the jar in dark and dry place for the next 2-3 months.

Shake it once in a while.

After the three months are up, filter the schnapps through a sieve lined with a coffee filter.

Add more vodka to taste, if it’s too sweet, and more sugar if it’s lacking in sweetness.

Save the discarded berries and use them in cakes and desserts.

Store the schnapps in sterilised bottles for another 2-3 weeks.

Enjoy a little dram at the table.
