Potato Waffles with Bacon and Peas

 

Every year on March 25th, it’s international waffle day and waffles is not something you should say no to. THe classic sweet waffles are amazing, but if you want to go all out, you could make an entire waffle menu. You could make these waffles. Mashed potatoes is a sinfully delicious treat…depending on how much butter you add.  But just imagine that mash combined with crisp bacon and sweet peas…and then a crispy crust? Heaven in a mouthful. So get to it!

POTATO WAFFLES WITH BACON AND PEAS
2 SERVINGS

500 G POTATOES
100 G CRISPY BACON
1 ONION, FINELY CHOPPED
1 EGG
100 ML MILK
40 G BUTTER
100 G FROZEN SWEET PEAS
50 G FLOUR
1 TSK. BAKING POWDER
SALT AND PEPPER TO SEASON

Start by peeling the potatoes and cut them into smalle chunks.

Boil until tender and then mash the potatoes.

Chop the bacon and add it to the mashed potatoes along with the rest of the ingredients.

Heat the waffle iron and butter the iron plates.

Use 1 dl mash for each waffle and bake for 8-10 min, until they are crispy.

Carefully remove the waffle from the iron and onto your plate.

Serve with either butter, creme fraiche and chives or something entirely different.
