Peanut Butter Cups

When it’s Christmas, there must also be chocolate on the table, lots of chocolate. And here’s one that just tastes so good. There are two main ingredients: Chocolate and Peanut Butter, it is rare that this mix goes wrong. These peanut buttercups are also bite sized treats, easy enough to take an extra or two. Nor do they take too much time to do.

PEANUT BUTTERCUPS
ABOUT 45 PCS.

PEANUT BUTTER FILLING:
125 G PEANUT BUTTER (CRUNCHY OR CREAMY WHICHEVER YOU WANT)
30 G BUTTER
55 G ICING SUGAR

Soften butter and peanut butter in the microwave for about 1 min and mix it with icing sugar to a creamy mixture.

Put the filling aside … don’t taste test too much.

CHOCOLATE SHELL:
300 G MILK CHOCOLATE
140 G DARK CHOCOLATE
20 G BUTTER
A LITTLE SEA SALT

Melt the dark and milk chocolate together with the butter and stir them into a shiny mixture.

Prepare a lot of minimuffins or confectionery moulds, sprinkle the bottom with a little sea salt.

Add 1 teaspoon of melted chocolate to the bottom of each mould, then ½ teaspoon of the peanut butter mixture.

Then finish with another teaspoon of melted chocolate on top.

Even out the chocolate, so the surface is flat and all of the peanut mixture is covered.

Sprinkle some salt over them and place them in the fridge until the chocolate has set.

Store them in the refrigerator in an airtight container … for as long as they last.
