Oat and Buttermilk Pancakes with Cheese

I had some leftover buttermilk and cheese in the fridge and thought about what I should use it for, the buttermilk was originally used to make buttermilk soup and the cheese for dinner.
I ended up wanting pancakes and decided to combine the two.
These pancakes are filled with pockets of melted cheese and crispy bacon for breakfast.

OAT AND BUTTERMILK PANCAKES WITH CHEESE
ABOUT 20 PANCAKES.

135 G ROLLED OATS
550 ML BUTTERMILK
100 G WHOLE WHEAT FLOUR
40 G FLOUR
100 G GRATED EMMENTAL CHEESE
2 TSK. BAKING POWDER
3 M/L EGGS
1 PINCH OF SALT
80 G COOKED BACON

Mix together rolled oats and buttermilk and let it sit for 30 minutes.

Add baking soda, whole wheat flour and flour and mix.

Add grated cheese and salt.

Whisk the eggs in one at a time and mix it all well together.

Heat a little fat, oil or butter, on a pan and pour a 1/2 dl of batter on the pan.

Bake the pancakes at medium-low heat until bubbles appear on the top and the bottom is golden brown, flip them over and let them finish baking.

Serve with bacon, butter and maple syrup, fruit etc.
