Chocolate Pudding

A delicious chocolate pudding made of 100% dark chocolate. It does not take all that long to mix together, but must, however, sit for a couple of hours in the fridge. The taste is strong, but velvety.

CHOCOLATE PUDDING
4 PERS.

25 G COCOA POWDER
175 G SUGAR
1 TSP. VANILLA SUGAR
30 G CORN STARCH
A PINCH OF SALT
525 ML WHOLE MILK
60 G EGG YOLKS (APPROX. 3 LARGE)
60 G 100% CHOPPED DARK CHOCOLATE

Whisk cocoa powder, sugar, vanilla sugar, salt and corn starch together in a pot.

Add the milk a little at a time and whisk it to a lump-free mixture.

Stir in the egg yolks and heat the mixture while stirring.

Cook it until it begins to thicken.

Turn down the heat and stir for a few more minutes or until the mixture holds its shape on the back of a spoon.

Turn off the heat and mix in the chopped dark chocolate, the heat of the pudding will melt the chocolate.

Spread the pudding in glasses or bowls and place them in the refrigerator for a minimum of 2 hours.

If you do not want a film coat on top of the pudding, you can cover it with cling film. The film must be placed close to the pudding.

Serve with whipped cream.
